Mango Coconut Shrimp Stir Fry
What You'll Need:
- 1 pound of cleaned and shelled shrimp
- 2 tsp minced ginger
- 1 tbsp minced garlic
- 1 tbsp fresh cilantro
- 2 bell peppers
- 1 sweet onion
- 1 bottle Delicae Gourmet Mango Coconut Dipping Sauce
- 4 cups prepared rice (we prefer jasmine rice)
Sautee sliced bell peppers, garlic, minced ginger sweet onion, and cilantro in half a bottle of Delicae Gourmet Mango Coconut Dipping Sauce. When the vegetables are halfway softened, toss the shrimp in the sautee pan. Precooked shrimp only need to be warmed - don't overcook them! For raw shrimp, sautee until they develop a pink hue. Serve over rice and top with more Delicae Gourmet Mango Coconut Dipping Sauce.
At home, we serve stir fry all by itself. If you're feeling ambitious, dumplings or egg rolls make an excellent side dish for homemade stir fry meals.
