SUN-DRIED TOMATO & OLIVE CHICKEN

Sun-Dried Tomato & Olive blended with the sweet-ness of sun-dried tomatoes is delicious on grilled meats and chicken. A terrific salad dressing mixed with balsamic vinegar, olive oil & feta cheese. Enlivens potato salad.

INGREDIENTS:

6 chicken breasts

½ cup of Sun-Dried Tomato & Olive Mustard

½ cup heavy cream

1 cup flour

1 cup white wine

2 teaspoons olive oil

DIRECTIONS:

1. Rinse chicken in water and dredge in flour until chicken is well coated.

2. In a large skillet, heat olive oil and sauté the chicken until done. Take care not to burn the pan. When all the chicken is done, set aside.

3. To the still hot pan add wine a little at a time. Deglaze pan then add the cream and mustard.

4. Heat until bubbling, thinning with remaining wine if needed.

5. Serve chicken with rice and grilled tomatoes or sautéed zucchini. Pour sauce over the chicken.

Yield: 6 servings
