The fresh sweet flavor of sun-ripened raspberries combined with the smoky heat of Chipotle peppers creates a wonderful flavor blend for barbequed ribs, chicken and pork. Makes a fantastic appetizer served over cream cheese with crackers. Incredibly delicious as dip for hot and cold appetizers.
INGREDIENTS:
1- 6 lbs. roasting chicken
¼ cup olive oil
2 teaspoons sea salt
Raspberry Chipotle Sauce
DIRECTIONS:
1. Preheat oven to 400°.
2. Place chicken on rack in roasting pan.
3. Rub olive oil and sea salt into chicken skin.
4. Brush chicken with Raspberry Chipotle Sauce.
5. Baste with Raspberry Chipotle Sauce every 15 minutes.
6. Roast until thermometer inserted into thickest part of chicken thigh registers 180°, approximately 1 hour.
